Summertime |Peach Treat
Last year the Inspired Housewife shared a yummy, goodness to good for you ice-cream called: No Sugar Peach Ice Cream… My kids love, love, loved it, so I thought I’d give it a try again this year… yep, they still love it.

So, There is this restaurant near where we live that serves a Peach Milk Shake during the summer months that my daughter loves, but certain dairies effect her negatively and aren’t her friend… they play mean in her body, causing havoc… which, means no peach milk shake for her.
In mama bear world that really isn’t acceptable, now is it?! Wanting to come up with an alternative to a dairy shake, I concocted, using Inspired Housewife Peach Ice cream recipe as my inspiration, a tasty Peach (almond) Milk Shake topped with Coconut Cream, and oh my it is so yummy –and I don’t like peach –so, yes… it is that good!
Summertime |Peach Treat:
Peach Almond Milk Shake Topped with Coconut Cream Recipe
5 medium peaches.
1/2 Cup Unsweetened Almond milk
1 Tablespoon confectioners sugar
1 teaspoon vanilla
1 can of Coconut Milk (refrigerate over-night)
Contact Paper Covered Cookie Sheet
Bring pot of water large enough to cover peaches to a rapid boil.
Boil Peaches for no more than 35 to 45 seconds.
Immediately remove peaches from hot water and place in ice-cold water until cooled.
peaches will peal easily, and then cut and place on contact paper covered cookie sheet. put in the freezer for several hours.
Adding frozen peaches to the blender while pouring a little almond milk until you reach the desired consistency.
pour into a cup with a few Chopped chunks of frozen peach, And then top with *Whipped coconut cream.
*Whipped Coconut Cream Recipe:
Remove (Solid) Coconut Milk from (cold) can, and then with a mixer whip or whatever it’s called… turn THE THING on AND LET the mixer do WHAT IT DOES, while slowly adding a tablespoonful of confectioners sugar and a teaspoon of Vanilla –AND THEN BOOM –YOU HAVE NON-DAIRY WHIP CREAM.
Tip: I use a hand-held electric mixer, and a stainless steel bowl; I put the stainless steel bowl and wire whisk thingy attachment in the freezer for HALF AN HOUR. when I put the cold (firm) coconut milk in the COLD bowl, and whip the cream, it helps in KEEPing the whipped coconut cream colder.
So, there, take that dairy allergy… Boom!
Because it’s summer and the memories are just waiting to happen.
